I’m spicing our life up with some chipotle chicken and corn chowder. The boy requested I make this again before he leaves, so of course I’m making it for him!
My modifications to the recipe: I added an extra chipotle chilli. My people live for hot spicy food. If I can make them sweat, I’ve achieved my goal. My store didn’t have any poblano chillies, so I substituted a jalapeño. I did not put tortilla chips in it while it simmered… bleah to soggy chips. But served on the side are delish and crunchy!
This has become one of our favourite recipes and definitely will be making it more now that soup and chowder season is coming.
